Challenges
- A carcass comes in as one line but sells as dozens of cuts — the yield and waste in between are never measured.
- The cost of each cut (leg, cubes, mince) cannot be worked out separately.
- Weight loss during mincing goes unrecorded, so stock does not reconcile at month end.
- Meat lots and origin are not tracked, so producing documents during an inspection is hard.

From carcass to cuts
- The carcass purchase enters stock by weight and lot.
- A cutting production order is opened and the resulting cuts are defined as co-products.
- Cost is allocated to each cut according to its share.
- Waste is posted on a separate slip and the yield is reported.
Counter sales
- The item is scanned by kilogram via the scale barcode.
- Payment is taken and stock is deducted in kilograms.
- At day-end the till and the waste record are closed.
